I first came across fennel in a Swiss restaurant on a steamed vegie plate and loved the taste and texture. This year fennel took over my garden. Thank you for telling me to roast the seeds in oil, and all the other helpful hints. I have a whole paper grocery bag full of delicate fresh green fronds – and I like the suggestion to use them like dill (which I use a lot of, like almost every morning in my diet egg white omelet). Instead of throwing away the abundance of seeds and fronds – I think I’ll dry the fronds and roast the seeds and give them both as Christmas presents, direct from my organic garden.
