I didn’t try to replicate this one, primarily because i already knew how it tasted like 😉 I believe, Flying fish uses a small teaspoon of fermented black bean sauce on top of their fish. If I am not mistaken everything else is more or less identical. To me this recipe is all about cabbage and shitake and how they flavor the fish. I made a few more variations recently, adding fresh ginger and serrano peppers as well – both turned out excellent.
