This year fennel took over my garden. Thank you for telling me to roast the seeds in oil, and all the other helpful hints. I have a whole paper grocery bag full of delicate fresh green fronds – and I like the suggestion to use them like dill (which I use a lot of, like almost every morning in my diet egg white omelet). Instead of throwing away the abundance of seeds and fronds – I think I’ll dry the fronds and roast the seeds and give them both as Christmas presents, direct from my organic garden.
