The best results I get (for my taste & my personal preference) is by using a food processor and adding water slowly, just enough water or lemon juice to get the right consistency. For me the “right” consistency is smooth but not too runny. Some people prefer chunky style, some make it too thin. I suppose its all good. But most importantly “magic” seems to happen when there is just the right amount of lemon juice, tahini, salt and water. Best way to achieve this is too add water slowly and use a processor.

I’ve been experimenting with blending various types of olives in my hummus and I’d like to try some of your suggestions here. I noticed you didn’t mention draining the juice from the can of beans. Do you drain or put all the contents of the can in the processor and add more water on top of that?

Another related question is what do you think about using the garbanzo bean juice from the can rather than water?
